Mì Quảng – a favourite dish from Tourance, Vietnam

Mì Quảng [mei wang] is a traditional dish from Tourance (Quang Nam, Da Nang) in the Middle of Vietnam, next to the former Capital Huế. Surroundings by the sea and Truong Son, cuisine of Quang Nam is special of spicy and salty dished.

But Mi Quang is an exception. A combination of shrimp paste, fish sauce, rice noodle, rice cracker and chilly powder creates a strong but gentle taste. Unforgettable for the first attempt. Guarantee of that.

Ingredients (4 people)

1/2 tablespoon turmeric
1 pound rice noodles (as thick as spaghetti) (Udon replaceable) 2 tablespoons peanut oil
1 tablespoon fish sauce
1 teaspoon tamarind paste
1 tablespoon sugar
1/2 teaspoon chili powder
Sea salt, to taste
1/2 pound small shrimp
6 quail eggs, hard-boiled for 5 minutes, then peeled
1 handful small watercress leaves
1 handful Thai basil leaves
1/2 cup bean sprouts
1 scallion, thinly sliced
2 tablespoons chopped cilantro
2 tablespoons coarsely ground peanuts
4 handfuls of fried pork rinds, crushed into pieces the size of quarters
4 kumquats, halved like a grapefruit
2 teaspoons finely sliced green chili.

Famous actress Chinatsu Wakatsuki, age 23, whose weblog boasts over 80 million page views per month, announced an end of her blog yesterday.

Last month she once implied about her blog’s end and caused a lot of reactions from her readers and media, which ended up to her apology for confusion, but it became real this time. Real reasons to retirement are not actually disclosed on her last post. She wrote it is not her retirement from show business, but only stops blogging “to do something else”.
